What happens if you follow the plans but don't include these extra bars on both sides.

Nothing happens.Those bars are to prevent tire to tire contact of opponents when racing. Open wheels contacting each other can lead to spectacular crashes. They might also help snagging a tire on  a tree.

You can do without them.  Honestly I always figured they were to keep trees away from the rear wheel.   I think it really comes down to what it's like where you use the buggy.

Doug makes them bolt on so IF and WHEN they get damaged they are easy to replace. He throught they looked cooler with them on and if my brain serves me correct he siad they made it a lot easier to get in and out as they were like steps.

Made good camera mounts too!
