I have an 8 quart Dutch oven that the Jambalaya and the Chili Verde will be cooked in. It's the biggest one they make and I'll fill it to the top but were probably pushing it's limits so the sides would help. The Carne Asada just means a lot of chopping of toppings. No big deal. Is anybody by any chance bringing a full size gas barbecue? It would help immensely with cooking all the Carne Asada meat.JambalayaCarne Asada TacosChili Verde Fabr - Our Schedule is to arrive sometime mid-Monday depending on how hard we drive. We have the campsite thru Thursday and then will have to move for Friday night. Which makes Friday iffy for us i.e. Buggy still running, weather, etc... We can try and work towards Taco Friday but ya never know....

Weather looks pretty good except for a couple of rain days.Got the grill issue covered. These things are WAY cheap nowadays. I used to replace parts on them, now I think you just replace the whole thing. I have a built-in for the backyard that I made stainless grates for out of 1/4" dia rod and have replaced the burners several times. Not anymore. Next time I just scrap it and buy a new one.
