I have an 8 quart Dutch oven that the Jambalaya and the Chili Verde will be cooked in.  It's the biggest one they make and I'll fill it to the top but were probably pushing it's limits so the sides would help.  The Carne Asada just means a lot of chopping of toppings.  No big deal.  Is anybody by any chance bringing a full size gas barbecue?  It would help immensely with cooking all the Carne Asada meat.

Jambalaya
Carne Asada Tacos
Chili Verde

Fabr - Our Schedule is to arrive sometime mid-Monday depending on how hard we drive.  We have the campsite thru Thursday and then will have to move for Friday night.  Which makes Friday iffy for us i.e. Buggy still running, weather, etc...  We can try and work towards Taco Friday but ya never know....

Don't worry about it Lance.  Do it however you want/need to. Kids are like me,they may or may not get there Fri. ,just depends on her work. Was just wondering. Put me and the Mrs down for tacos whenever. Thank you!

Can we get a headcount please?

I'm going to make Three nights worth of dinner:
Jambalaya
Carne Asada Tacos
Chili Verde (has been added by request)

I'll gladly make enough for all as long as we figure out how many people are going to participate.

Lance = 3
Doug Heim = 2
Jon/Don = 2
Carl-2  ;D ;D
Brian/dee= 2
Fabr/Ms Fabr=2 (steak taco only, he dont like Lousiana cookin')
Tibbs = 2 (nights noted below) ;D

2 for the Tibbs camp.  We will be there the 20, 21 and 22nd.  Three nights of meals, wow, that is over the top.  You sure??  What sides can we help with that will go with the menu items?

Thanks

Doug, are you bringing that Cuda?
Work is done except for the steering shaft into the wifes car. I am ready!
2 weeks for me. I can't wait to see Colorado again before we hit the dunes. I need to get away.
Looking forward to seeing you all.

The cuda will be there!!! Transmission has no reason to fail this trip or any other trip it will make in its lifetime!!!

Weather looks pretty good except for a couple of rain days.

Got the grill issue covered.  These things are WAY cheap nowadays.  I used to replace parts on them, now I think you just replace the whole thing.  I have a built-in for the backyard that I made stainless grates for out of 1/4" dia rod and have replaced the burners several times.  Not anymore.  Next time I just scrap it and buy a new one.

Any rainy days all are welcome to come on up or down to the mother ship and hang out.  Bring your own favorite beverage and just chill.

If I believe I cannot do something it makes me incapable of doing it. But when I believe that I can, then I acquire the ability to do it , even if I didn't have it at the beginning.
